Designed for making gut-friendly fermented vegetables such as Korean kimchi, German sauerkraut, fermented pickles, vegetable juices, sauces, and other cultured foods, this highly concentrated probiotic blend helps support a successful fermentation process while promoting the growth of beneficial bacteria.
This versatile culture can also be used to add probiotics to dairy and non-dairy yoghurt, as well as cultured dairy products such as soft cheeses. Please note that this probiotic culture is not a yoghurt starter culture and will not produce yoghurt on its own. When making yoghurt, it must be combined with a suitable yoghurt starter culture.

How Does It Work?
This probiotic culture acts as a protective fermentation culture by encouraging the growth of beneficial bacteria while helping to inhibit unwanted bacteria, yeasts, and moulds.
It is suitable for a wide range of probiotic applications, including:
- Fermented vegetables such as kimchi, sauerkraut, and other vegetable ferments
- Fermented juices and sauces
Probiotic dairy and non-dairy yoghurt
Cultured milk products and soft cheeses
To enrich homemade yoghurt or cheese with probiotics, simply add the culture powder directly to your milk at the same time as your yoghurt or cheese starter culture. Stir gently to ensure the culture is evenly distributed.

Fermentation Safety Tip
For best results, we recommend using pH test strips when fermenting vegetables. The final ferment should reach a pH level below 4.6 to ensure a safe and successful fermentation.

When stored correctly, freeze-dried lactic cultures can remain viable well beyond the printed date on the packaging.

For the best shelf life, store the culture in the freezer immediately after receiving it. Although we ship Australia-wide, extended periods outside freezer storage may reduce the culture’s long-term viability.
